Well the soup I made last night was a success, I can't wait to have leftovers for lunch! My hub even had a second bowl, AND he even ate the vegetables, wow!! I made a few substitutions to avoid a trip to the store, so I used black beans instead of white, added smoked kielbasa sausage, pepper, and an extra 4 cups of stock and 3/4 cup raw long grain rice. I made some green onion and cheese biscuits to go along side, sper yummy too! It was from Rachael Ray the other day, Monday. Use 2 1/4 C biscuit mix, 2/3 C milk, 4 chopped scallions and 2 cups shredded cheddar cheese. Drop 6 mounds on a baking sheet and bake at 450 for 10 minutes. Delish!
