I made this for dinner on Sunday night with Rachael Ray's Sticky Orange Chicken, so good! No pic though because it is all gone LOL! My hub picked a huge zucchini the other day and I had no idea what to do with it, and my friend Christine gave me this recipe. It took literally 15 minutes to make and I finished while the chicken was baking.
6 Cups chopped zucchini
1 large chopped onion
3 cloves garlic, minced
1 1/2 cups shredded mozzarella cheese
1 1/2 cups chunky mild salsa
In a large pot, saute zucchini, onions and garlic about 10 minutes. Drain off the water from the zucchini, and top with cheese and salsa. Stir to heat through and melt cheese and serve.
